Cannelloni is a cylindrical shape of lasagna type pasta. It is typically baked in the oven with a filling and covered in a sauce and has origins in Italian cuisine. Popular stuffings include spinach, cheeses or beef. The sauce that covers the shells is traditionally a tomato based sauce. Cannelloni made their way to Spain and are typical in Catalan cuisine. They are called canelons in Catalan and traditionally eaten on St. Stephen’s Day which is also when Boxing Day is celebrated, the day after Christmas Day. The very first reference to stuffed pasta can be traced back to 1770 but the name cannelloni was first used at the beginning of the 20th century. In America, our version of this dish is called Manicotti, but it can also refer to the dish it is baked in. The main difference between the two is that Manicotti are typically machine-made shapes filled from one end by a machine, whereas cannelloni sheets are wrapped around their filling by hand.
At Aversano’s Italian Restaurant we make ours with chicken. Our Canneloni are filled with pieces of tender chicken breast and the perfect combination of cheeses. Then they are topped with both alfredo and marinara sauce. This combination is often referred to as pink pasta because combining the two, tones down the red marinara into a pink color with the help of the white Alfredo. This leads to some cheesy, bubbly, tasty pasta.
